INGREDIENTS:
- 21/2 cup almond flour
- 4 teaspoons ground cinnamon
- 1/3 cup coconut oil
- 1/4 teaspoon salt
- 2 teaspoon baking powder
- 1 teaspoon baking soda
- 2 large eggs
- 2 teaspoon vanilla extract
- 1 medium banana
- 1 cup grated carrots
- 1 cup grated zucchini
DIRECTIONS:
- Preheat your oven to 350.
- Mix all ingredients together in a food processor until mixed completely.
- Spray a muffin pan with non-stick olive oil or use baking cups.
- Fill each 3/4 of the way.
- Bake for 20-25 min until cooked through [check with a fork!].
